Behind the plate
Batch: Single serving.
Equipment: Panini press or heavy frying pan, Serrated knife, Small ramekin.
The recipe
Ingredients
- Toastie:
- 100 g tiger or Vienna loaf — Two thick slices.
- 2 slices white cheddar — Weigh the slices during the kitchen trial for consistent portions.
- 100 g ready-to-eat cooked ham — Thinly sliced.
- 4 slices tomato — Pat off excess surface moisture.
- 20 g red onion — Thinly sliced.
- To serve:
- 10 g mixed salad leaves — Washed and dried.
- 1 portion Creamy Honey Mustard Dressing — Recipe 9.
Method
- 1. Prepare the plate: Arrange the dry salad leaves and a ramekin of dressing on a serving plate. Keep the cold items away from the grill.
- 2. Build the sandwich: Layer one slice of cheddar, ham, tomato and red onion on the bottom slice of bread. Add the remaining cheddar and close with the second slice of bread.
- 3. Toast: Place in a preheated panini press or a heavy pan over medium heat. Toast for about 4–6 minutes, turning if using a pan, until the bread is golden and the cheese has melted. Reduce the heat if the crust colours before the centre warms.
- 4. Slice and serve: Cut diagonally with a serrated knife and arrange beside the salad. Serve immediately with the honey mustard dressing.
Chef’s notes
- Dry tomato slices help keep the bread crisp.
- Measure the cheddar by weight when establishing a menu cost.
- Editorial review: The original “two thick cheese slices” is retained, but a weighed cheese portion is needed for consistent costing.
- Storage: Prepare close to service. Keep ham, cheese, salad and dressing chilled at 0–5°C until needed. If serving is delayed, chill the sandwich promptly rather than leaving it at room temperature.
- Conditional allergens: Check the loaf, ham, mustard and mayonnaise labels for any additional allergens.
At the table
Serve hot with the cold salad and dressing on the side.
