Equipment: Small bowl or ramekin, Teaspoon or small whisk.
The recipe
Ingredients
- Dressing:
- 1 tbsp commercial mayonnaise — Prefer a pasteurised product.
- 1 tsp Dijon mustard
- 1 tsp honey
- 0.25 tsp lemon juice or white vinegar — Editorial starting quantity replacing an unmeasured squeeze.
- salt and black pepper — To taste.
Method
- 1. Combine: Put the mayonnaise, mustard, honey and lemon juice in a small bowl.
- 2. Mix and taste: Whisk until smooth. Taste before adding salt: mayonnaise and mustard are already seasoned. Adjust pepper and acidity to suit.
- 3. Serve chilled: Spoon into a clean ramekin and serve, or cover and refrigerate until needed.
Chef’s notes
- Use measuring spoons: 1 tbsp is 15 ml and 1 tsp is 5 ml in this collection.
- The dressing should taste balanced with the food it accompanies, not just on its own.
- Editorial review: Lemon/vinegar ¼ tsp is an editorial starting measure replacing “a tiny squeeze”.
- Storage: Cover and keep at 0–5°C. For a single-portion home recipe, make for the current meal. A commercial shelf life needs its own validation and the mayonnaise maker’s storage directions.
- Conditional allergens: Check the mayonnaise and mustard labels; some products also declare sulphites.
At the table
Serve with the Tiger Toast, a small side salad or chicken strips.
