Behind the plate
Batch: Commercial batch.
Equipment: Heavy stockpot, at least 12 L capacity, Whisk, Heatproof jug.
The recipe
Ingredients
- Pepper & wine:
- 50 g black peppercorns — Coarsely crack.
- 50 ml brandy or cognac
- 50 ml sweet red wine or port
- Sauce body:
- 5 L prepared brown or beef gravy — Warm; choose a gravy with a suitable salt level.
- 3 L White Wine, Thyme & Cream Sauce — Prepared recipe 4; this is not a plain wine reduction.
- Finish:
- 50 g dried parsley — Source quantity; trial for texture and colour.
Method
- 1. Toast the pepper: Warm the dry stockpot over medium heat. Add the cracked pepper and stir for 30–45 seconds, just until aromatic. Do not scorch.
- 2. Deglaze safely: Take the pot off the heat. Pour the measured brandy and wine from a small jug, away from any flame. Return to medium heat and simmer for 1–2 minutes. Deliberate flambéing is not required.
- 3. Combine the sauces: Whisk in the warm gravy and prepared cream sauce. Bring gradually to a gentle simmer, stirring from the base.
- 4. Infuse and finish: Stir in the parsley and simmer for about 5 minutes. Check the pepper strength, salt and thickness. The gravy may already provide enough seasoning.
- 5. Measure and serve: Measure the finished yield and ladle over the chosen dish. If holding for service, keep the sauce at or above 63°C.
Chef’s notes
- Use coarsely cracked pepper for aroma and texture.
- The final colour and salt level depend heavily on the gravy.
- Editorial review: “White wine reduction” in the source is clarified as recipe 4’s cream sauce.
- Editorial review: The method removes the unnecessary flambé instruction. Alcohol is not claimed to be completely cooked off.
- Storage: Cool rapidly in shallow containers and refrigerate within 2 hours at 0–5°C, or hot-hold at or above 63°C. Reheat only once to at least 70°C throughout. Use the shortest validated shelf life of the component sauces.
- Conditional allergens: Gravy, bouillon and wine may add wheat/gluten, celery, soya and sulphites. Check all component labels.
At the table
Serve 75–100 ml with steak, grilled chicken or a roast dinner.
