Homemade Passion Fruit Jam

A vivid golden preserve with the tropical perfume, gentle sharpness and signature seeds of ripe passion fruit.

01 β€” THE STORY

Behind the plate

Passion fruit pulp already contains intense flavour and natural acidity, so this jam needs only sugar, lemon and controlled reduction. Straining half of the pulp is an easy way to keep the familiar appearance without filling every spoonful with seeds.

The finished jam is glossy, spoonable and especially good where a sharper preserve is needed. This version is intended for refrigerated storage unless it is replaced by a tested canning formula and process.

03 β€” THE METHOD

Cook step by step

  1. 01

Wash the jars and lids thoroughly and keep the jars warm. Treat this formula as a refrigerator jam unless using a separately tested canning recipe and process.

  2. 02

If you prefer fewer seeds, press half of the passion fruit pulp through a sieve and combine the smooth juice with the remaining seeded pulp.

  3. 03

Place the pulp and sugar in a wide, heavy-based saucepan. Stir over medium heat until the sugar has completely dissolved.

  4. 04

Bring to a controlled boil, stirring frequently and scraping the base and corners of the pan.

  5. 05

Add the lemon juice and cook for 25–30 minutes, until the jam is glossy, thickened and wrinkles lightly when tested on a cold plate.

  6. 06

Remove from the heat, rest briefly for any foam to settle, then ladle into the warm jars. Wipe the rims, close with clean lids, cool and refrigerate.

Chef's notes

  • Weigh the extracted pulp rather than the whole fruit so the sugar ratio remains consistent.
  • Passion fruit catches easily as it reduces; use moderate heat and stir more frequently near the end.
  • The jam will continue to firm as it cools, so stop cooking when it is thick but still fluid enough to ladle.
  • Hot-filling alone does not establish a safe room-temperature shelf life. A shelf-stable product requires a tested formula and complete boiling-water process.
  • Keep this refrigerator version chilled and use within 3 weeks. Discard at the first sign of mould, fermentation, leakage or off odour.
