Homemade Jackfruit Jam
A smooth golden tropical jam that captures the honeyed aroma of ripe jackfruit with a clean lemon finish.
01 β THE STORY
Behind the plate
Ripe jackfruit has a naturally dense, fibrous flesh and a distinctive tropical fragrance. Blending the bulbs before cooking produces a uniform pulp that can reduce into a smooth, rich spread.
Because the mixture is thick from the beginning, it needs attentive stirring and a heavy pan. This formula is presented for refrigerated storage rather than as a tested shelf-stable canning recipe.
03 β THE METHOD
Cook step by step
- 01
Wash the jars and lids thoroughly and keep the jars warm. Unless using a separately tested canning method, the finished jam must be refrigerated.
- 02
Check that every hard jackfruit seed and its surrounding membrane has been removed, then blend the ripe flesh into a smooth pulp.
- 03
Transfer the pulp to a wide, heavy-based saucepan and add the sugar. Cook over medium-low heat, stirring until the sugar has dissolved.
- 04
Continue cooking with frequent, thorough stirring, scraping the base and corners so the dense fruit does not stick or burn.
- 05
Add the lemon juice and cook for 30β35 minutes, until the jam is thick, glossy and holds a clear track briefly when the spoon passes through it.
- 06
Remove from the heat and carefully fill the warm jars. Wipe the rims, close with clean lids, cool and refrigerate.
04 β FROM THE PASS
Chef's notes
- Use only ripe, sweet jackfruit flesh. Unripe cooking jackfruit will not give the intended flavour or texture.
- A heatproof spatula with a flat edge is useful for keeping the whole base of the pan clean as the jam thickens.
- If the purΓ©e is extremely dense, lower the heat rather than adding unmeasured water, which can extend cooking and dilute the flavour.
- This exact formula has not been presented with a tested water-bath process, so a sealed lid alone should not be treated as proof of shelf stability.
- Keep refrigerated and use within 3 weeks. Discard if mould, fermentation, leakage or an unusual odour develops.
