Large-Batch Shepherd’s Pie
Deeply browned lamb finished in two stages with wine, stock, vegetables, veal jus and the linked Parmesan mash.
01 — THE STORY
Behind the plate
This is a production shepherd’s pie organised around a master lamb base. Ten kilograms of mince are browned and reduced with wine and stock; smaller one-kilogram portions can then be finished with vegetables and jus as needed.
The topping lives on the separate Creamy Mash page. Linking to that canonical preparation keeps the pie formula focused and ensures every dish uses the same Parmesan-enriched piping mix.
03 — THE METHOD
Cook step by step
- 01
For Stage 1, cook the minced lamb in batches until dark brown and beginning to stick to the pot without burning. Drain and reserve the rendered fat.
- 02
Cook the diced onion in enough reserved lamb fat until translucent without colour.
- 03
Return all the browned lamb to medium heat with the onions. Add the white wine and cook until almost completely evaporated.
- 04
Add the chicken stock and continue cooking until the liquid has reduced into a rich, cohesive lamb base. Cool or move directly to Stage 2.
- 05
For Stage 2, blanch the diced carrot and celery until tender and drain well.
- 06
Place 1 kg of the cooked Stage 1 lamb mixture in a pot with the blanched vegetables, confit onions and veal jus.
- 07
Cook until the filling comes together, then add the chopped parsley and correct the seasoning.
- 08
Place 200 g lamb filling in each ramekin. Pipe on the Parmesan variation from the linked Creamy Mash recipe while it is warm.
- 09
Bake for service until the filling is piping hot and the potato ridges are golden, verifying the core temperature according to kitchen procedure.
04 — FROM THE PASS
Chef's notes
- The recipe was submitted twice with the same formula, so this is the single canonical page.
- The 8 litres chicken stock appeared in the method but not the ingredient heading; it has been restored to the ingredient list.
- The second-stage ‘1 kg minced lamb’ has been interpreted as 1 kg cooked Stage 1 lamb mixture because that is what the method specifies.
- Confit onions are not replaced by Balsamic Onions automatically; they are different preparations.
